Ginger Milk Curd 姜汁撞奶 (More Experiments...)

I made these again...the week before last...and found out that I actually should use more ginger juice to my 150ml of milk. Then Baby Bear got sick and that made me worried + busy + exhausted to think of more Ginger Milk Curd.  When he got better, he developed rashes on his face and body due to the antibiotic he'd taken. But luckily the rashes subsided in 2 days. 

Then I made some of the curd for Papa Bear last Friday. I waited for his first mouthful and he said: "Mmmm, this is yummy...what is it?" After all the explanation, he said: " Good, so this is something yummy and healthy."

...and I'm just glad that he liked it. (So that he can help eat more of my experiments...hehehehe...)

From 2 weeks ago:
I used Farmhouse fresh milk this time:
(pasteurised and homogenised milk)














1st bowl
150ml milk + 15ml ginger juice + sugar
>>>>>>>>>very soft curd just like the first time I did with the Farmhouse Omega milk, BUT the curd passed the spoon test!!

2nd bowl

150ml milk + 22ml ginger juice + sugar
>>>>>>>>>real success at last!! The curd is more firm, more taufufah-like...So I should have followed Wendy's recipe after all...   :p


Friday's Curd (This is just to show off a bit...    :P)

30ml ginger juice

220ml fresh milk (Yup, I used little Bear's milk bottle to measure) + sugar to taste

...taa-dahhh!

I think I'm a bit hooked on making this...   :P

I love these! Thanks to you too! I failed on the first attempt. I think it was because I used too little ginger juice. On my second attempt, I used more ginger and the curd formed nicely. This is perfect to eat...well for me...because it's so cold in city even though it's summer.

Yeah...I sometimes wished that M'sia has cooler months such as spring and autumn so that I can have heaty food and put on over-coats when I go out. :P

Oh I thought no need to put up the pics coz I mentioned before that i'm gonna try the Farmhouse Fresh Milk...ok lah...I think I'll show it again.
Of coz have to try until get nice curds la...U'r my "sifu" wor...cannot "wash your face" la...

Actually if you follow Wendy's recipe you'll definately get it... I think the tempreture of the milk is crucial.

Home Kreation:
You can try this at home la...if you like milk and also ginger.
Chill it in the fridge before serving will be nice too, I think... I haven't tried that though. This is said to be good for relieving "wind" in the stomach...and good for "those days" in a month... :)

You caught the ginger curd bug too! I was even thinking about it when I went to sleep. Hahaha.

Yeah my baby caught the flu virus from me as well and had 3-4 days of fever. Last day in rashes even without antibiotics. Quite an interesting experience for me but definitely not an enjoyable one. Can understand how you felt.May our tiny tots stay strong and healthy!

Btw, using milk bottle to measure is quite cool. Do you think breastmilk can work on ginger curd? Hahaha..

Hey, breastmilk is a great idea! But I don't know if I have enough for experiments! My pump just went "kong" so I have been nursing my baby "straight from the source" :D
Maybe I'll try one day... :P

hmm so the extra ginger juice make the the curd more solidify ? Hmm... but i try not to use too much ginger juice
